Raising her speed stats too high can be counterproductive since the usual result is making her more clumbsy than she was to start with. Daedra, the Mythic Dawn, vampires and necromancers are very high on her hate list. Her thinking might be slow, but it runs in tracks made of the finest steel which makes her both an implacable enemy as well as an ally that can be relied on to the bitter end. I made her willpower stats high because the way I see it if Eiolynn had the ability to raise herself from the dead without outside help she didn't do that on an idle whim. I'm using the SM Combat Hide mod to add immersion with this. In those circumstances she can be quite deadly. Occasionally she will pause and think about it where enemies are present and not aware of her and then that's when she will take out her bow. When enemies taut her, 'Do your worst', she will do exactly that and it's usually the last thing they ever get to say. Faced with an enemy attacking her Eiolynn's default reaction is charge it and kill it. She does become frustrated easily so I got the Bash Lock mod just for her since lockpicks are more likely to throw her into a rage than actually open anything. Her intelligence is slow rather than completely stupid, - or that's how I play her. Yes Eiolynn is a bit clumbsy which is to be expected if your after death resurrection spell got delayed for a few hundred years.
